A measure of the rate at which substrate is converted to product in an enzyme-catalysed reaction is called enzyme activity.

Enzyme Activity Notes:
Enzyme activity can be defined as a measure of the catalytic ability. This means that the performance of an enzyme i.e. the rate of conversion of reactants into products can be termed as enzyme activity. Enzyme activity can be measured by two methods. The first method is to measure the decrease in substrate concentration in a period of time, and the second one is to measure the increase in concentration of a product after a period of time. There are various factors that affect enzyme activity such as temperature, pH and substrate concentration.
