Water, amino acids, hydrogen sulphate ion and hydrogen carbonate ion are common examples of amphoteric substances. They may be used in isoelectric focusing to maintain a stable pH gradient. Reactions of acids and bases with amphoteric substances play a very important role in chemistry. If an amphoteric substance reacts with an acid, it behaves like a base by accepting proton and if it is reacted with a base, it behaves like an acid by donating proton.
